Baked Pesto Tilapia with Sweet Potato Fries

Quick, easy, healthy and delicious!

The first weeks of quarantine, we were lucky enough to have HomeChef boxes delivered each week. This meant I could focus on non-perishables for lunches/breakfasts when I went to the grocery store, and made shopping much easier. Now, we have to adapt again - HomeChef has been having fulfillment issues, and my boxes have been cancelled or delayed the past few weeks. Meal planning is definitely harder when you don’t know how many meals you’ll be needing, and when stores have such limited inventory you definitely need to be flexible.

We were lucky enough to be able to get some tilapia this week from Amazon Fresh. Fish is a great option for protein and healthy fats, but it definitely doesn’t have a long shelf life. It really needs to be used within a few days or frozen, so when we got to 3 days after purchase I knew it needed to be used. I grabbed a few pantry items to pull together a fun and flavorful meal.

Ingredients

  • 2 filets of tilapia

  • 1 T pesto

  • 1 lb sweet potatoes

  • 1/2 T olive oil

  • 1 t Bangkok spice blend (Penzey’s), or preferred spice/pepper blend

  • Salt and pepper

Instructions

  1. Preheat oven to 390F and preheat air fryer to 400F.

  2. Slice sweet potato into thin fry shapes.

  3. Season tilapia with salt and pepper, then rub with pesto.

  4. Spray air fryer basket with cooking spray, and add sweet potatoes. Drizzle with olive oil, seasoning blend, salt and pepper. Toss and “fry” for 12 minutes, tossing every few minutes.

  5. Spray baking sheet with cooking spray, and place tilapia on tray. Bake in oven for about 8 minutes.
